FIANO DI AVELLINO DOCG
The origins of Fiano are thousands of years old. The Latins called this vine
Vitis Apiana, as the bees seemed particularly
fond of the sweetness of its grapes. Much appreciated in the Middle Ages,
it was cultivated by Carlo D'Angiò for its exceptional qualities
characteristics. Straw yellow in colour, intense aroma with
hints of honey, hazelnut and smoke, it has a fresh flavor and
harmonious and goes well with the most refined fish dishes.
Ideal for excellent aperitifs.
Production area:
Montefalcione, in the heart of the Fiano production area
Avellino DOCG, with land located at an altitude of 500/550
mmsl. Particularly suitable for viticulture with recognition
of two Controlled and Guaranteed Designations of Origin
such as Fiano di Avellino and Taurasi.
Grape variety:
Fiano di Avellino selected 100%.
Farming system:
The form of cultivation of the vineyards is Guyot, conducted with
integrated farming method. The production per hectare is
70/80 quintals.
Winemaking:
Manual collection and placement in plastic boxes max
weighing 20 kg, carried out in the second ten days of October. Crushing-destemming,
and cryomaceration. Fermentation in tanks
of stainless steel at controlled temperature 20/25 days.
Characteristics:
Bright, clear and consistent straw yellow colour,
almost creamy. Intense and floral bouquet. Soft flavor
warm with a honeyed and mineral streak in a good balance.
Pairings:
Cheeses and dishes based on fish, shellfish, seafood and
appetizers, Excellent as an aperitif, it should be served at a temperature
of 8°- 10° C.
